We use a special wheat from Fukuoka for our noodles. Fukuoka, one of the leading ramen regions in the country, developed this wheat specifically for ramen. When made into noodles, it has the best characteristics for ramen, such as a strong texture, a good bite, and a pleasing color. The noodles, which are aged and dried at a constant temperature for an extended period, are resistant to overcooking and have a firm and smooth texture.

Tomato Ramen
This ramen has a rich and mild flavor with a combination of acidity and sweetness. It features an original soup made using "Momotaro" tomatoes, which are a source of pride for the "JA Niji" in Ukiha City. After enjoying the noodles, it's our recommendation to mix rice with the remaining soup to create a delicious risotto!

Yuzu Pepper Tonkotsu Ramen
A new flavor that combines Oita-grown yuzu pepper with the classic tonkotsu soup from Kyushu. Enjoy the rich tonkotsu broth and the fusion of yuzu and red chili.

Ajodashi Shoyu Ramen
This is a soy-based soup with subtle flavor of flying fish (Ago) from Nagasaki. Within its light taste, you can savor the fragrant aroma and umami of the dashi (broth).
